Sausage and Kale Soup Recipe

Warm, hearty sausage and kale soup made in one pot.

Ingredients
  

  • Italian sausage – 400 grams pork or chicken
  • Kale – 1 large bunch around 200–250 g, chopped
  • Onion – 1 medium chopped
  • Garlic – 4 cloves minced
  • Potatoes – 2 medium diced (optional but good)
  • Chicken broth – 1.5 liters 6 cups
  • Olive oil – 1 tablespoon
  • Black pepper – ½ teaspoon
  • Chili flakes – ½ teaspoon or less… or more
  • Dried thyme or oregano – 1 teaspoon
  • Salt – to taste
  • Cream – ¼ cup optional

Equipment

  • One large pot
  • Knife.
  • Cutting board.
  • Spoon.
  • Something to scoop soup with

Method
 

Step 1.Start with the sausage
  1. Heat the pot. Add olive oil.
  2. Add sausage. Break it up.
  3. Let it brown properly.
  4. Don’t rush. Let it stick a bit. Scrape later.
  5. If it smells good — you’re doing it right.
Step 2.Onion and garlic
  1. Add onion. Stir. Scrape the bottom.
  2. Cook until soft. Slightly golden.
  3. Then garlic. Just briefly.
  4. If garlic burns… yeah. Don’t let that happen.
Step 3.Potatoes go in
  1. Add potatoes. Stir them around.
  2. Let them sit in the sausage fat for a minute.
  3. It already feels like food, right?
Step 4.Broth
  1. Pour in the chicken broth.
  2. Bring to a boil.
  3. Then lower heat. Gentle simmer.
  4. Let it go 15–20 minutes.
  5. Until potatoes are tender.
Step 5.Kale (All of It)
  1. Add the kale.
  2. Yes, it looks like too much.
  3. It always does.
  4. Stir. Watch it shrink.
  5. Simmer for another 5–10 minutes.
Step 6.Season and stop
  1. Add pepper, chili flakes, and herbs.
  2. Salt slowly. Taste. Adjust.
  3. Add cream if you want.
  4. You don’t have to.
  5. Turn off heat.
  6. Let it sit for a few minutes.
  7. Soup needs a pause.
