  • pinch of salt

  • Bowl & spoon (the cozy eating kind)
  • Small butter knife
  • Lid (for gentle steaming)
  • Heavy-bottom pan (prevents sticking — trust me)

Method
 

Step 1 — Heat the Liquid
  1. Add water + milk to the saucepan.
  2. Bring to a gentle simmer.
  3. Not rolling… not wild…
  4. Just tiny bubbles.
  5. I always hover for a second — just to be sure.
Step 2 — Add the Grits (Slowly… No Panic Stirring)
  1. Sprinkle grits in gradually.
  2. Stir while pouring.
  3. Otherwise… clumps happen. Been there.
  4. Give a small stir.
  5. Pause.
  6. Stir again.
  7. Trust me — the rhythm makes a difference.
Step 3 — Cook Low & Slow
  1. Reduce heat → let them simmer.
  2. Stir occasionally.
  3. They thicken gradually.
  4. The smell gets warm… cozy… like a calm kitchen morning.
  5. If they get too thick?
  6. Add a splash of water or milk.
  7. If too thin?
  8. Let them simmer for another minute.
  9. Grits teach patience — gently.
Step 4 — Add Butter (The Best Part)
  1. Turn heat off.
  2. Drop butter in.
  3. Watch it melt across the surface…
  4. Slow… glossy… soothing.
  5. Give a light stir.
  6. Taste.
  7. Add a pinch of salt — only if needed.
