- Reduce heat → let them simmer.
- Stir occasionally.
- They thicken gradually.
- The smell gets warm… cozy… like a calm kitchen morning.
- If they get too thick?
- Add a splash of water or milk.
- If too thin?
- Let them simmer for another minute.
- Grits teach patience — gently.
Step 4 — Add Butter (The Best Part)
- Turn heat off.
- Drop butter in.
- Watch it melt across the surface…
- Slow… glossy… soothing.
- Give a light stir.
- Taste.
- Add a pinch of salt — only if needed.
- And there it is.
