Ingredients
  

Pancake “Buns”
  • 1 cup all-purpose flour
  • 1 tablespoon sugar not more—trust me
  • 1 teaspoon baking powder
  • A pinch of salt
  • ¾ cup milk
  • 1 egg
  • 1 tablespoon melted butter or oil
  • 1 –2 tablespoons maple syrup
Filling
  • Eggs 1 per sandwich
  • Cheese slices cheddar is easy
  • Sausage patties or bacon optional
  • Butter or oil for cooking

Equipment

  • One mixing bowl
  •  A whisk or fork
  • A non-stick pan or flat tawa
  • A spatula
  • Another small pan for eggs or meat

Method
 

Step 1: Pancake Batter
  1. In a bowl—flour, sugar, baking powder, salt. Mix.
  2. In another bowl—milk, egg, butter, maple syrup.
  3. Combine gently.
  4. Don’t chase smooth batter. Lumps are fine. Really.
  5. Let it rest for a few minutes.
  6. I know you want to rush. Don’t.
Step 2: Cook the Pancake Buns
  1. Heat pan on low to medium-low. Important.
  2. Light grease.
  3. Pour small circles—bun sized, not big pancakes.
  4. Cook slowly. Flip once.
  5. You want them soft and pale golden. Not dark.
  6. Set aside. Try not to eat one already. (I fail here.)
Step 3: Eggs & Meat
  1. Cook sausage or bacon first. Keep warm.
  2. In the same pan, cook eggs. Scrambled or folded—your call.
  3. Season lightly. Pancakes already bring sweetness.
Step 4: Assemble
  1. Bottom pancake.
  2. Egg.
  3. Cheese.
  4. Meat.
  5. Top pancake.
  6. Press gently.
  7. Pause.
  8. Smile a little.
  9. That’s a McGriddle.
