  • cheddar / mozzarella / Mexican blend — your call

  • bell peppers
  • sweet corn
  • mushrooms
  • tomatoes small pieces
  • spinach
  • cooked chicken strips
  • sausage or bacon bits
  • beans sounds weird but… really good
Seasoning
  • salt — pinch
  • pepper — pinch
  • chili flakes optional
  • cumin or paprika tiny dash if you like depth

Method
 

Cooking Method — Step-by-Step (like we’re cooking together)
  1. Let’s take it easy — not rushed — breakfast should breathe a little.
Step 1 — Cook the Eggs
  1. Crack eggs into a bowl → whisk lightly.
  2. Heat pan → add a little butter.
  3. Pour eggs → scramble softly.
  4. Not too dry… not too runny… just creamy.
  5. Remove from pan → keep aside.
  6. (And yes — I always taste a small bite… habit.)
Step 2 — Prepare the Filling Mix
  1. In the same pan (flavor bonus):
  2. sauté onions + peppers (or whatever you’re using)
  3. add tiny pinch salt + pepper
  4. Just soften them — don’t overcook.
  5. Add the scrambled eggs back in.
  6. Give it a gentle stir.
  7. Smells good already.
Step 3 — Assemble the Quesadilla
  1. Place tortilla on pan (low heat).
  2. Add:
  3. thin cheese layer
  4. egg + veggie filling
  5. another light cheese layer
  6. second tortilla on top
  7. Cheese on both sides = glue effect.

Step 4 — Cook Slowly (Crispy… Not Burnt)
  1. Cook on low-medium heat.

  3. Flip carefully — one brave, confident move.
  4. Cook until:

  6. cheese fully melted
  7. edge smell… toasty
  8. Take it off heat.
  9. Let it rest for 1 minute (hard, I know).
  10. It crisps more while resting — magic.
Step 5 — Slice & Serve
  1. Use a knife or pizza cutter.
  2. Serve with:
  3. salsa
  4. ketchup (been there)
  5. sour cream
  6. yogurt dip
  7. guacamole
