Step 1: Start With the Potato
- Peel the potato and cut it into small cubes.
- Small pieces matter.
- They cook faster.
- And mornings are impatient.
- You can boil them for 7–8 minutes until just tender.
- Or pan-fry directly if you’re not rushing.
- I usually boil first. Less thinking later.
- Drain and keep aside.
Step 2: Crisp the Potatoes
- Heat oil or butter in your pan.
- Add potatoes and… pause.
- Let them sit.
- Don’t stir too much.
- Let color develop.
- When they turn lightly golden and smell comforting, add salt and pepper.
- That smell alone feels like breakfast.
- Remove and set aside.
Step 3: Eggs, Gently Done
- Lower the heat.
- Crack eggs into the same pan.
- Scramble slowly.
- Soft eggs forgive mistakes.
- Dry eggs ruin mornings.
- Add a pinch of salt.
- Stop there.
Step 4: Everything Meets
- Add the potatoes back into the eggs.
- This is where you add onions, vegetables, meat — if using.
- Mix gently.
- Turn off the heat.
- Sprinkle cheese on top and let it melt quietly.
- No rushing cheese. Ever.
Step 5: Warm the Tortilla (Important Step)
- Warm the tortilla on a dry pan for 10–15 seconds per side.
- Cold tortillas crack.
- Warm ones cooperate.
- I learned this the messy way.
Step 6: Roll the Burrito
- Place filling in the center.
- Not too much — temptation is real, but restraint helps.
- Fold bottom up.
- Fold sides in.
- Roll tightly.
- Wrap in foil if you like.
- Let it rest for half a minute.
- That short pause changes everything.
