  • Beans sounds odd — but trust me
  • Green chili or hot sauce

  • Knife.
  • Cutting board.
  • Spatula or wooden spoon
  • A bowl for eggs
  • Foil or parchment paper (optional)

Method
 

Step 1: Start With the Potato
  1. Peel the potato and cut it into small cubes.
  2. Small pieces matter.
  3. They cook faster.
  4. And mornings are impatient.
  5. You can boil them for 7–8 minutes until just tender.
  6. Or pan-fry directly if you’re not rushing.
  7. I usually boil first. Less thinking later.
  8. Drain and keep aside.
Step 2: Crisp the Potatoes
  1. Heat oil or butter in your pan.
  2. Add potatoes and… pause.
  3. Let them sit.
  4. Don’t stir too much.
  5. Let color develop.
  6. When they turn lightly golden and smell comforting, add salt and pepper.
  7. That smell alone feels like breakfast.
  8. Remove and set aside.
Step 3: Eggs, Gently Done
  1. Lower the heat.
  2. Crack eggs into the same pan.
  3. Scramble slowly.
  4. Soft eggs forgive mistakes.
  5. Dry eggs ruin mornings.
  6. Add a pinch of salt.
  7. Stop there.
Step 4: Everything Meets
  1. Add the potatoes back into the eggs.
  2. This is where you add onions, vegetables, meat — if using.
  3. Mix gently.
  4. Turn off the heat.
  5. Sprinkle cheese on top and let it melt quietly.

Step 5: Warm the Tortilla (Important Step)
  1. Warm the tortilla on a dry pan for 10–15 seconds per side.
  2. Cold tortillas crack.
  3. Warm ones cooperate.

Step 6: Roll the Burrito
  1. Place filling in the center.
  2. Not too much — temptation is real, but restraint helps.
  3. Fold bottom up.
  4. Fold sides in.
  5. Roll tightly.
  6. Wrap in foil if you like.
  7. Let it rest for half a minute.
  8. That short pause changes everything.
